every thanksgiving my mom always makes my very favorite dessert: ginger pudding. i'm telling you, this stuff is like crack. i could eat it for breakfast, lunch and dinner. and still want more. so this last thanksgiving my mom taught me how to make it. which was both a blessing and a curse. blessing, because now i will know how to make it for special occasions or whenever i'm feeling domestic. curse, because i realized just how easy it is and might end up weighing one hundred million pounds after trying to survive on a ginger pudding based diet for the rest of my life. but at least i'd be a really happy one hundred million pounder, right? well, either way i will be sharing the recipe online so hopefully some other people can understand this love obsession of mine :)





ginger pudding:

  • buy molasses ginger biscuits (the darker the nicer - i use the mi-del brand).
  • you'll need 2 packets of biscuits to 1 tub of whipping cream.
  • whip 500 ml of heavy cream with:
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1-2 tablespoons sugar (can be left out if biscuits are sweet enough)
  • layer the cream and biscuits
  • refrigerate overnight so the cream can soak into and soften biscuits
  • can top with pecans and cherries to make it look pretty
  • enjoy!
